Toraja Sulawesi Organic
Back to the Indonesian famous flavor profile! This is an organic certified, wet hulled lot from Rantekarua Estate, Bittuang, in the Tana Toraja region of southern Sulawesi, an island of the Indonesian archipelago, well known for coral reefs and dive sites. The estate encompasses 1200 hectares, 700 of which are planted with coffee. A full wet-mill equipped with Pinhalense equipment is located on-site and coffee is dried on raised beds under expansive cover. Standard processing includes flotation, pulping, 24 hour fermentation, wash, soak, and 14-21 days drying. "Wet hulled" is a process created in Sumatra and is now used throughout the Indonesian archipelago!
Similar to Sumatra or Bali Blue Moon, this process results in our sumptuous beans, creamy and thick with the syrupy body and spicy, herbal notes while balancing with a strong earthy chocolaty undertones. The producers in this region have many acceptable conditions for growing coffee like volcanic soil and thick forests for shade that maintain moisture needed for the coffee plants. Sulawesi coffee is also very clean with good sweetness and a little hint of a fruity tone, making a tasty cup from light to dark roast, but best at medium roast. We notice some intense flavors, sweet brown sugar that make it a highly complex and aromatic brew!
